Hollandaise Sauce

This stuff is perfect for Asparagus, Artichokes, and just about all other green things that taste good!
It's simple to make, low-carb, and gluten free
But be careful not to burn it!

You'll Need:
3 Egg yolks
2 Tablespoons Lemon Juice
1/4 teaspoon salt
Dash of Cayenne Pepper (optional)
1/2 cup margarine or butter
2 small bowls (microwavable)

Makes 2/3 cup, enough for a family of four for one dinner

So first, you need to separate the yolks from the whites

Add yolks, lemon juice, salt, and cayenne in bowl 1

Mix together with a wire whisk
(I have a "milk frother" which works wonders for this sauce)

Then melt the stick of butter in bowl 2

Blend egg yolk mixture into butter with the wire whisk

Mix really well

Now here is the part you want to be careful on. Do not burn your sauce in this step.

Microwave on MEDIUM heat (power level 50%) until thickened. 
Stick it in the microwave for 30 seconds, stir
Microwave for another 30 seconds, stir
Serve.

It is delicious and tops off the perfect meal
