Buffalo Potato Bites

Okay. So it's literally been forever since I have blogged. I apologize. And Johnni, I still don't have markers for my board. I still love you:)) Below is a Picture of the WONDERFUL sign that my Delta made me for Christmas for this blog (that I usually neglect)!!! Anyone wanna donate Chalk Markers to the Ashlynn Foundation? haha JK! So anyways, I was making food for all my brothers for the Superbowl, and came across these nuggets :D 


Things You'll Need:
Potatoes (small/medium in size) 
Oil (to brush/crisp)
2 Cups Shredded Chicken
1/2 Cup Hot Sauce (whatever kind you like, I use homemade)
2 TBL Spoons Butter (melted)
Salt and Pepper to Taste
1/2 Cup Chedder Cheese (or whatever ya got)
1/2 Cup Crumbled Blue Cheese
Some Green Onion
1/4 Cup Blue Cheese Dressing

First, you need to BAKE all of your potatoes. Bake them whole for about an hour @ 425*.
If you need directions for that, you're not from Idaho. Go find another blog!!! haha

Once they're baked, let them cool so that you can work with them with your hands.
Then cut them in half!

Scoop Out all the middle stuff
Leave about 1/8 of an inch of potato left (that's the good stuff)
**(I have a recipe of what to do with all the left over middle part of the potato)**
Just search the blog for Mashed Potato Soup YUM!
K so they should look kinda like this
They don't have to be perfect...TRUST ME! 


Brush some oil lightly on them
@ 450* put these bad boys in the oven for 10 min

Then flip them over and let that side crisp for 10 min

While that 20 min (10+10) goes by, you can make the filling.
You might just want to eat this by itself.
Take the hot sauce, chicken, Melted Butter and mix it all together!


Then pepper and salt the inside of the potato peel.

I put my blue cheese crumbles down first
Then I filled it with the chicken/hot sauce mixture

cover with the remainder of the cheese

Face shots!!!

Basically just Broil until the Cheese is melted
Top with Green Onion
Serve.
Delicous-ness.

I served with ranch and Blue Cheese
Everyone Loved Them.
I would eat these any day of the year!
