Brownie Caramel Cheesecake

Okay! I apologize deeply for the amount of time that it has been inbetween posts. I recently had recruitment, new members, and loads of homework from school and AGD.

BUT, This is actually for my sisters! 
(that's my excuse anyways)

This Post is all about the Goody's :))

Caramel Brownies...with cheesecake!!!
The brownie serves as the "crust" for us gf peoples. 

You'll Need:
A Brownie Mix (and All of its ingredients)
1 1/2 Lb. Cream Cheese (3 8 oz. packs)
1/4 cup powdered sugar
12 oz. White Chocolate (I buy at Winco and use the scale there)
2 teaspoons Vanilla Extract
1 Jar of Caramel 
1 cup Heavy Cream
Foil

Make your brownies according to the directions, put in a buttered (spray) pan and bake 
(this shows only one pan, but I did end up making two batches of brownies because there was so much cheesecake filling left)

Now for the "cheesecake" portion

Take your 12 oz choco chips, and 1 cup heavy whipping creme.
Put ALL OF YOUR ATTENTION to this step (don't get sidetracked)
You can do this while your brownies are baking!!!!

Melt the chocolate on a low-to low-medium heat
STIR CONSTANTLY



When it starts to get "chunky" like this, you're almost done!!!
Keep stirring until it is smooth
Then as soon as it hits smooth, take it off the stove and put it into the refrigerator, 
stirring it occasionally. 
That needs to "chill" for about 30 min

Now, while that is chilling, mix your powdered sugar, vanilla and cream cheese

My cream cheese looks a little different because I had a premixed combo of creme cheese and canned pineapple....for a wedding, and it needed to be used anyways...It's sweet enough that if you run into this too, do the same, just don't try like salmon cream cheese or anything funky...haha 


Mix well, until it is combined.

Now This is when your chocolate mixture should be cooled, add that to your cream cheese 
Mix for about 2 min, or until fluffy and light

(my chocolate wasn't cooled enough to just go straight into the cream cheese when I finished mixing that, so I just cleaned up the dishes while I waited)

Your mix should look something like this!

Now, here is the step I forgot on my first one, You need to add the caramel here before the cheesecake.

(see below for that step)

Cover your brownie with it, and even it out with your spatula...
don't over fill it too much, because you have to cover it in foil 



Now, I thought that this recipe was only enough for one brownie, but I found out that there is way more than enough for two brownies. Sooooo....

I scooped this into a bowl, made another batch of brownies


Then added the caramel (that I forgot the first time) (see above)
Added cheesecake, covered in foil and put it in the fridge.

You have to let them sit overnight, so make sure this is a planned dessert....


YUUUMMMMM!!!!! 

This is really good, but it is also very rich....great in bite sizes!
(or as a whole piece, because I love brownies and cheesecake that much)
