Grilled Corn & Summer Salad

 Last week was my brother's girlfriends get together party thing. haha 
She made this delicious corn (even though it looks grose)
(even mayonaise haters LOVED this corn)
It's her recipe she learned when she was selling corn out of a truck :)) (that's how we do it in ID)
The summer salad is just a recipe my mom came up with and we've been using fooooooreverrrrrr!!!!

You'll Need
Corn (in the husk)
Mayonaise 

AND

cucumbers
tomatos
olives (that are gf)
onions
italian dressing


First, take your corn and DO NOT husk it.
Just peel the husks back enough that you can get to most (or all) of the corn with them still being attatched!!!!
Spread the mayo all over the corn on the cob!
It sounds really nasty...but I promise it's delic!

Now take parts of the husk, or non-flamable ribbon and tie it together

This are the parts we used to tie them together
and not all of them have to be tied, just the ones that aren't staying closed by themselves very well

Stick 'em on the grill till they look like this and WALA!
When you eat them, you'll want to scrape off a little bit of the mayo...but they were def good!

SUMMER SALAD

Dice cucumbers & tomatos into chunks
slice onions
and add olives
mix in a large bowl and then add italian dressing (enough that it is kind of floating, or soaking)
We also like to add just a little bit of vinegar because we like that taste

I literally could eat this salad ALL DAY!
and if you have leftovers, it's better the next day...because it's had more time to soak!

Buffalo Meatballs fooooorrr TAILGATING!

IT'S THAT TIME AGAIN!!!!!
My ultimate favorite time of year....FOOTBALL! 
Especially because I go to Boise State.....We are all proud Bronco's
I tried a new recipe and tested it on my friends at one of our get togethers!
It is really delicious and I got a ton of compliments.
It's not very spicy, but my roommates thought that they were.
So If you like spicy food, 
add a Habinero(there are no suggestions for spelling on that, deal with it!)
 or jalepeno!!!!
These are substitutes for messy hotwings that you have to awkwardly try to devour in front of your friends and family ......But they taste just as good!!!!

You'll Need:
(Meatballs)
1 pound ground turkey (I used 1 1/4 Lb.)
2 eggs
2 Oz. Cream Cheese (It should say on the silver packaging how much is how man oz.)
3 Tbs. Chopped Celery
3 Tbs. Ground Black Pepper
And like I said, Some kind of spicy pepper
(Sauce)
1/2 Cup Franks Hot Wing Sauce
1/2 Stick of Butter
Mix all the ingredients for the meatballs together
Don't add salt!
(this is coming from a salt lover...it's def salty enough)

Your hands might get cold....As with all meat!

Then, take the Tablespoon that you used to measure the stuff out 
Scoop the mixture onto a greased pan in one scoop increments

Throw these in the oven at 350* for 10 minutes

While that's going on, take your "sauce" ingredients and stick them in the microwave for 2 minutes
Remember to stir occasionally because you're using butter
BUT the bowl WILL BE HOT when you pull it out of the microwave..haha yeahhhh...

After 10 minutes..pull them out...and they look nasty...they don't taste that way, I promise.

Now be careful here because they are tender due to the creme cheese!!!!

Dunk them in the sauce and return it to the pan.
If you have leftover sauce in the bowl then just drizzle it over all of them

Stick them back in the oven for another 12 minutes

Then they look like yummy-ness!!!!

As you can see the ones on the darker pan (below) are crispier than the ones on the silver pan!
I tested that out, but when they're all mixed together, you can't tell the difference.


Now plate and of course you need to serve them with celery!
Especially if you add peppers!

Yummy Vegetable Thingy :))

So a while back I "pinned" this recipe on my shared board with my mom! After a very short time....it had 245 repins and 42 likes!!!!! I figured with that kind of attention...I probably needed to make it. AND blog about it :)) I wasn't sure what it was going to taste like...realizing it's only veggies and cheese, but it was actually a lot better than just "veggies and cheese". 
The thyme really gives this dish a whole new meaning! 
This dish is perfect for any side, BBQ, tailgate (even though it's not the typical tailgating food, which we will be getting into very soon as the season is approaching!) or just as a healthy-ish snack!
Okay...on to what really matters!

You'll Need:
Some onion
Garlic
Whatever Cheese you have on hand (mmm anything with cheese is good)
1 small zucchini 
1 small squash (summer)
1 potato
1-2 tomatoes (depending on how much you like tomatoes)
Olive oil, or oil 
THYME (for those of you unaware, that is a seasoning!)
Salt & Pepper
All the ingredients you need, for the visual chefs! 

In a pan, saute the onion and garlic for about 5 minutes (in your oil)
This is just going to go in the bottom of your dish, so you don't need any exact amounts or anything!


While those are sautéing, slice up all your veggies! 
You'll want them kind of thin, but not entirely!

Now that's your onions and garlic have melted together well and you're done slicing your veggies!
Add them to your 8X8(ish) baking pan!

Pretty sliced Veggies again (don't ask)

Put them in your pan.
You can alternate, make a pattern, or just shove them in there!
It's gonna taste good regardless!

No add Salt & Pepper & Thyme
IN GENEROUS AMOUNTS
(that's what the lady said on her blog which I will post below)
I just added till I could see a good amount of it all!

Cover your dish in tinfoil!
Bake for 30 minutes at 400*

This is how it looks after 30 min. 
You can tell the veggies are definitely not cooked yet

Add cheese! yummmmy!
Recover with tinfoil and bake for another 15-20 minutes

Mmmmmmmmmm!

Now this dish is done! and it is REALLY good!
Now I understand why it had so many repins and likes!

Ahi Tuna Salad ...in the middle of a desert!

 Hello! I've been crazy busy finishing off my summer in Vegas and vacationing in Palm Desert! In the midst of vacation, I got the opportunity to cook in a beautiful kitchen with my Uncle Ed!!!!! It was a blast...and it was totally worth it!!! We had a dinner party with a couple of their friends...this dish is great for groups of people. It requires very little "cooking"...just some prep and presentation!

 You'll Need:
Ahi Tuna (as much as you want)
Seasoning
Oil
Salad
Garnishes
This is the messy step(s)...but it's not bad..the only thing that gets messy is your hands
Oil the fish very well....make sure all sides are covered in oil.

Then take your seasoning (below) and cover the fish thoroughly. 
You can use any kind of rub, but you'll want it to be something that isn't too coarse.


When you're done it should look like this!
and this was enough Tuna for 6 people + a few leftover pieces. 

you can have your little helper put the garnishes on the plate while you're cooking to make it easier for you. They can also toss the salad with some shredded carrots, onions, and whatever else you want in your salad! Then put those on the plates

You just want to sear the fish.
about 2 minutes on each thick face (wider)
and 1 minute on each side (skinny)

Ahi Tuna is not meant to be cooked all the way through. If you do, you'll butcher it......ew. 


once the fish has a quick searing, cut it into small cubes.
kind of like sushi!

Add the tuna to the greens and it's ready to serve

It normally has some soy sauce/teriyaki based homemade salad dressing, but it wasn't prepared gluten free. I used balsamic vinaigrette. Any vinegar based, asian style dressing would work just fine!
Also, Ahi Tuna may be a little more expensive than most things on this blog, but you don't have to really purchase much else above price range. It kinda evens out. 

Add a little pizzaz to this dish by giving your guests chopsticks to eat with! It really  made the dish :))
