Yummy Vegetable Thingy :))

So a while back I "pinned" this recipe on my shared board with my mom! After a very short time....it had 245 repins and 42 likes!!!!! I figured with that kind of attention...I probably needed to make it. AND blog about it :)) I wasn't sure what it was going to taste like...realizing it's only veggies and cheese, but it was actually a lot better than just "veggies and cheese". 
The thyme really gives this dish a whole new meaning! 
This dish is perfect for any side, BBQ, tailgate (even though it's not the typical tailgating food, which we will be getting into very soon as the season is approaching!) or just as a healthy-ish snack!
Okay...on to what really matters!

You'll Need:
Some onion
Garlic
Whatever Cheese you have on hand (mmm anything with cheese is good)
1 small zucchini 
1 small squash (summer)
1 potato
1-2 tomatoes (depending on how much you like tomatoes)
Olive oil, or oil 
THYME (for those of you unaware, that is a seasoning!)
Salt & Pepper
All the ingredients you need, for the visual chefs! 

In a pan, saute the onion and garlic for about 5 minutes (in your oil)
This is just going to go in the bottom of your dish, so you don't need any exact amounts or anything!


While those are sautéing, slice up all your veggies! 
You'll want them kind of thin, but not entirely!

Now that's your onions and garlic have melted together well and you're done slicing your veggies!
Add them to your 8X8(ish) baking pan!

Pretty sliced Veggies again (don't ask)

Put them in your pan.
You can alternate, make a pattern, or just shove them in there!
It's gonna taste good regardless!

No add Salt & Pepper & Thyme
IN GENEROUS AMOUNTS
(that's what the lady said on her blog which I will post below)
I just added till I could see a good amount of it all!

Cover your dish in tinfoil!
Bake for 30 minutes at 400*

This is how it looks after 30 min. 
You can tell the veggies are definitely not cooked yet

Add cheese! yummmmy!
Recover with tinfoil and bake for another 15-20 minutes

Mmmmmmmmmm!

Now this dish is done! and it is REALLY good!
Now I understand why it had so many repins and likes!
